Cajun/Creole seasoning: You can purchase this seasoning mixture at pretty much any grocery store or through Amazon (link for purchase below).Lemon juice: For acidity which also helps balance the richness.Green onions: Don’t skip the green onions! The freshness they add is needed to balance the richness.Sour cream: For the dipping sauce as well.Andouille or Cajun-style sausage: I tried both Zatarain’s Andouille and Cajun-style smoked sausage and found them equally good.Cream cheese: It should be room temp so that it can be easily incorporated into the batter.Buttermilk: It adds a little acidity as well as tenderizes.Paprika: If you have it, I recommend smoked paprika.Neutral oil: High smoke point, neutral oils like vegetable and canola are ideal for deep frying.I t’s great for kids and adults!These corn dog bites aren’t just for adults! I know it may be difficult because they are so darn good but please make sure you share some with your kids (if you have them).It’s surprisingly easy to make and only takes about half an hour!It’s really just a matter of mixing up the batter, dredging the sausage, frying ’em up, and making the sauce – ok that sounds like a lot.It’s SO flavorful!With loads of spices as well as flavorful Andouille or Cajun seasoned sausage, this dish is definitely not lacking in the flavor department. If you’re an adventurous eater and you like both corn dogs and hush puppies, I have no doubt you will love this recipe. Personally, I’m all about trying new and unique foods and these corn dog bites are just that. I certainly hadn’t until I whipped these babies up.
